russet potatoes
large, scrubbed clean
cold water
for soaking
vegetable oil
for frying

Instructions
Using a waffle cutter, slice potatoes into waffle shapes by rotating the potato 90 degrees between each cut.
Soak the sliced potatoes in cold water for 30 minutes to remove excess starch.
Drain and pat the potatoes completely dry with paper towels.
Heat oil in a deep fryer or large pot to 350°F (175°C).
Fry the potatoes in batches for about 3–5 minutes until golden brown and crispy.
Drain on paper towels and immediately sprinkle with sea salt.
Serve hot with your favorite dipping sauce.
Notes
For an extra crisp texture, double fry the potatoes: fry lightly first, let cool, then fry again until golden.
