Ingredients
  

Ice Cream Base

  • 14 oz full-fat coconut milk from a can
  • 3 tbsp cacao powder
  • 10 Medjool dates pitted
  • 0.5 tsp pure vanilla extract optional
  • chocolate chips optional

Instructions
 

  • Place the ice cream machine bowl in the freezer for 18–24 hours to ensure it's properly chilled.
  • In a high-speed blender, combine the coconut milk, cacao powder, pitted dates, and vanilla extract (if using). Blend on the highest setting until the mixture is very smooth, about 3 minutes.
  • Turn on the ice cream machine and pour the blended mixture into it. Let it churn until it reaches a soft-serve-like consistency, approximately 45–60 minutes.
  • If desired, add chocolate chips during the last few minutes of churning to incorporate them into the ice cream.
  • Serve the ice cream immediately for a soft-serve texture, or transfer it to a freezer-safe container and freeze for an additional 15–20 minutes for a firmer consistency.

Notes

Ensure you use high-quality, full-fat coconut milk for the creamiest texture. Medjool dates add natural sweetness and help achieve a soft consistency. If you prefer a more intense chocolate flavor, you can increase the amount of cacao powder slightly.
