Healthy Homemade Mayonnaise

Ingredients
  

Mayonnaise Base

  • 1 egg room temperature
  • 1 cup light olive oil or avocado oil
  • 1 tsp Dijon mustard
  • 1 tbsp lemon juice freshly squeezed
  • 1/4 tsp salt adjust to taste

Instructions
 

  • Place the egg, Dijon mustard, lemon juice, and salt in a tall container.
  • Pour the oil on top and let it settle for a few seconds.
  • Insert an immersion blender into the container and blend on low, slowly moving upwards until thick and creamy.
  • Taste and adjust seasoning if necessary.
  • Store in an airtight container in the refrigerator for up to one week.

Notes

For a tangier mayo, add an extra teaspoon of lemon juice. If the mayo is too thick, add a teaspoon of warm water and blend again.
