Instructions
Place the egg, Dijon mustard, lemon juice, and salt in a tall container.
Pour the oil on top and let it settle for a few seconds.
Insert an immersion blender into the container and blend on low, slowly moving upwards until thick and creamy.
Taste and adjust seasoning if necessary.
Store in an airtight container in the refrigerator for up to one week.
Notes
For a tangier mayo, add an extra teaspoon of lemon juice. If the mayo is too thick, add a teaspoon of warm water and blend again.
